WINEMAKING NOTES:
Cabernet Sauvignon is difficult to consistently produce at an affordable price. Our secret is 3-fold.
1) Say no to bulk wine. Long-term grape contracts provide consistency without manipulation.

2) Work the vineyard. We prune leafing to manage pyrazine levels. We hate green flavors in our Cab.

3) Finish smooth and clean. Inexpensive cabs can taste dirty and astringent, not Alias. Like James Bond, we want to open with explosiveness and excitement, but end with our suit still looking pressed even when it’s spread out across the floor. A smooth finish.
For 2019, we had such a wonderfully uneventful vintage, it was a gift. Long hangtime for development of big flavors of blackberry, currant, and dark cherries. A subtle treatment
of 1-year old French and American oak brings nice tobacco leaf and baking spice note. Big and bold flavors, with a clean and smooth finish. The perfect wine to enjoy with bold foods, BFFs, and Bond girls.
