He created a fresh drink with peach flavoured sweet notes whose pulp became the main ingredient. When an exhibition dedicated to Giovanni Bellini was being held at the Doge’s Palace in St. Mark’s Square, Giuseppe Cipriani saw assonance between the chromatic texture and the idea behind his cocktail, leading to the creation of The Bellini.
